I couldn't think of anything better than to make one of her sponge cakes again, like we did the day after she died.
The boys were very excited to come home to a sponge on the bench after school. Jay said he remembered that Nan was always happy whenever we would go and visit her. Harri said that he remembers Nan giving them treats out of the biscuit tin when we would go to her house.
The cake was devoured pretty quickly, and if I do say so myself I think it was pretty good.
I think Nan would be proud of my efforts.
I was saying to someone the other day that I would like to learn how to make light sponge cakes. It's nice to see the traditional recipes being passed on. And I like the cream all over the cake, to give it a special look.

ReplyDeleteThat looks delicious! I can never serve it any other way, except Nan's way- With some icing sure dusted on top, cream in the middle and raspberry jam, it always has to be raspberry jam. I loved Nan's raspberry cordial and meringues too.
